Chocolate muffins

So, today I baked lovely sugar free chocolate muffins with a mascarpone butter cream on top. Mum is coming tomorrow to baby sit Nemo so needed something yummie for her;=)

Chocolate muffins á la Marja: 
(I did dubbel of this to get more muffins and I got 8 muffins out of it)












Ingredients:

  • Muffins
  • 70 gram of butter
  • 1 egg
  • 25 gram of dark sugarfree chocolate
  • 1 ½ dl almond flour
  • 3 table spoons of grated coconut
  • 8 table spoons of Stevia or other sweetener
  • 1 tablespoon of cacao
  • 1 teaspoon of baking powder
  • 1 pinch of vanilla powder
  • Chocolate butter cream
  • 50 gram of butter
  • 80 gram of mascarpone
  • 3 table spoons of stevia 
  • 30 gram of dark chocolate
  • 1 pinch of vanilla powder
  • If you like: some dark sugar free chocolate for garment

Instructions:

    Muffins
  1. Put the oven on 175 degrees. Melt the butter gently together with the dark chocolate ( this can be done in the microwave)
  2. Mix all the dry ingredients (stevia can be exchanged to other sweeteener if you like). Add the egg and the melted chocolate butter.
  3. Put 4-5 double muffin tins and put the paste in them. Bake in the middle of the oven for 20-23 minutes. Let them cool while you do the butter cream.
  4. Chocolate butter cream
  5. Melt the butter gently together with the chocolate.
  6. Add mascarpone. Stir well so that all lumps disappear.Add stevia and vanilla powder and mix well.
  7. Once the muffins have cooled off, spread or squirt on the butter cream. If you want use a potato peeler to add some chocolate pieces on top of the muffins for decoration.

Haha... I've already made such muffins. But my cream was easy and without mascarpone. But the rest recipe is the same :-) wow it's cool! They are really tasty!

Hi Anette!

I can´t write that often at the moment I guess. We got evacuated yesterday because of high floods. Since yesterday evening, the whole place where I live swims in water!

Now we stay at the place of my mum´s friend. So kind from her to let us live in her house, which she normally has for her alone.

But I want to tell you a little "adventure story" which will be a bit long so take a cup of tea or coffee and lean back if you have the time :).
Yesterday, before we went to my mum´s friend, we left our three cats and our two parrots at the house, with enough food of course, because we live a bit higher and everyone said the water would never get so high, never. And we thought so, too. But as we found out today, the water was already high and the said in the news that it would still rise. We ordered an animal rescue team to get the cats and parrots out. A few hours later, an assistant of our animal´s doctor, who is in contact with the team called us and said they have already saved our cats and parrots. We were so happy!

But now it comes:
Just half an hour later, there was another call. I already felt something bad. And it was another assistant who said that the information was false, our animals were still in the house and the animal rescue team were on their way, but they needed the key to our house.
Believe me Anette, I got SO angry! I mean, how can something like this happen? First, they say our animals are save and then they say no they aren´t! I mean, this makes kind of a difference, not? Humans can make mistakes, of course, but this, in such an important case, is not tolerable at all, I think!

Anyway, we drove to the bridge which leeds to the other side of the danube, where our house stands. The police were there and they didn´t let anyone pass the bridge. We got out of the car and explained them the situation and they allowed my mum, but only her, to walk over the bridge to hand in the key to the rescue team. So she went, me and my brother had to wait and to wait...
after a while I called my mum and she told me that it´s not possible anymore to reach the house on feet, because of the water so the key is useless. And the rescue team was on its way in a boat. After a while, my mum returned and said they weren´t there yet, because they have to save so many animals. Sadly, there was also a farm with oxes, but the oxes had to be slaughtered because it wasn´t possible to get them save. Anyway, another worker told my mum the team would call her when they are through with saving our animals. And a few hours later, finally, the call came and this time, the information was correct.

Our animals are at our animal´s doctor now and tomorrow we´ll see them. It was so exciting but ended good,luckily. But still I´m angry about the wrong information they gave us. How is this possible? Would be the same as a doctor who gives a patient poison instead of medicine, by mistake. The patient is glad that he got help and a bit later he sees that it was just an illusion.
I just hope the water will not reach our flat and destroys everything. But the only things in it which aren´t replacable, our animal´s lives, are save luckily :)
